Add all ingredients in order listed and bring to slow boil. Turn off and allow to sit after a few minutes, (you don’t want veggies overcooked).

Serve over cooked rice noodles, rice vermicelli, or glass noodles in bottom of bowl.

Variations – may also add some garlic, more carrots, shiitake mushrooms, kale, zucchini, other leafy veggies, broccoli florets, and so on.
