Sauté the onion in oil until soft.
Place the onion and remaining ingredients in a stand mixer with a beater attachment and combine.
Add more oats if the mixture is too soft.
Let the mixture sit for 5 minutes.
Prepare a cookie sheet with a silicone baking sheet or a light coating of plant-based oil spray.
Use a small cookie scoop to form balls and drop dough onto the prepared cookie sheet.
Bake at 350°F for 45 minutes or until the edges turn golden.
VARIATIONS
Omit the cumin for a more neutral flavor. Try cashew butter instead of almond butter.

PLANNING AHEAD
These meatballs freeze well before baking. Drop them on a cookie sheet, freeze, and then store in a tightly sealed bag. When you need them, place them frozen on a greased cookie sheet and bake for 50–60 minutes.
