Preheat oven to 400°F.
Cut vegetables as listed.
Mix fresh thyme, garlic, olive oil and brown sugar in a bowl. Now add zucchini, carrots, squash, turnips, red onions and toss mixture. If needed you may add additional olive oil or water to help mixture cover all of the vegetables.
Spread mixture on baking sheet, cook for 35 minutes or until vegetables are golden. Add lemon juice on top when complete.
While vegetables are baking, cut plantains in half, then slice length wise. Warm skillet on medium heat. Now add water, vegan butter and plantains. Cook plantains for 6-7 minutes on each side or until tender.
