Preheat oven to 400°F. Place 3 corn tortillas in lightly greased 13×9 baking dish; set aside.

In a skillet, heat olive oil and sauté meatless ground beef for 3 minutes. Add Mexican stewed tomatoes; simmer 8 minutes.

In a large bowl, combine black beans and Mexican corn.  

Place half of the meatless ground beef mixture over tortillas.  Top tortillas with half of bean mixture. Sprinkle with ½ cup soy cheese. Repeat with corn tortillas, meatless burger mixture, bean mixture and soy cheese.

Bake for 25 minutes.  Serve with favorite salsa and soy sour cream.  Serves 8
