Wash, cube, and boil potatoes in salted water. Cook until fork tender, then strain.
In a small saucepan, combine 2 cups water with 1¼ cup Cheez Mix. Heat slowly while stirring until sauce is thickened. May add a drizzle of extra virgin olive oil if desired.
Blend cooked potatoes, Cheez, and coconut milk. Add water to reach desired texture.
Tip: Add broccoli, spinach, peas, etc. after soup has been made for added texture and nutrition.
