“Black Bean Enchilada Bake”
Cook black beans until soft and tender
Sauté sweet onion, green bell pepper, garlic, and olive oil together until vegetables are tender and translucent.
Add sautéed veggies and seasonings to black beans and simmer for 30 minutes.
You may refry beans if you desire.
