Soak nuts overnight OR for at least 2 hours in hot water, then rinse and drain.
Blend in a food processor until crumbly, NOT mushy.
Soak the TVP in hot water for about 1-2 minutes, then squeeze as much as possible.
Add about ¼ cup of oil to a pan, then stir-fry the peppers, onions, garlic, carrots, and mushrooms for 2-3 minutes.
Add the nuts and tomato paste. Mix thoroughly.
Then add TVP and stir until well combined.
Add seasonings, herbs, and salt to taste. Cover and let it simmer for about 10 minutes. Stir and let simmer for an additional 10 minutes or until you see fit
