Measure 1 cup of mung bean and rinse well, many times, until the water is clean.
Next, cover it with water and soak overnight or at least 4 hours.
The next day, discard the water and add the beans to a blender with the rest of the ingredients. Blend for about 1 minute or until smooth.
Spray a NON-STICK PAN, and pour about ½ cup of the blended egg mixture. Cook on medium heat.
Add chopped onions and bell peppers, and sprinkle some black salt and vegan cheese if desired.
Fold it in half and let it cook for a couple of minutes, then flip it and let the other side cook for a few more minutes.
Repeat the process until the blended mixture is finished.
