Cook quinoa using the “2 cups” of water with salt to taste.
After the quinoa is cooked. In a pan, add oil and bell peppers and let fry on medium-low for about 1 minute.
Add onions and mix veggies. Stir-fry for about 1-2 minutes.
Add herbs (basil, oregano).
Add seasonings and 2 cloves of grated garlic.
Then add quinoa.
Mix thoroughly, cover, and let it simmer on medium heat for about 5 minutes. Stir and simmer for 10-15 more minutes.
