“Black Bean Enchilada Bake”
Slice the yellow onions and sweet bell pepper, julienne style.
Sauté the pepper and onion until tender,
Pull the cilantro leaves from the stems and give them a rough chop.
In a large baking dish, layer as follows or however you desire, be creative:
Repeat these layers until pan is full.
Cover and bake the casserole for 40-45 minutes, or until the edges are bubbly and the cheese just begins to brown on top.
Garnish with cilantro, olives, tomatoes, or avocado, if desired.
Serve warm and enjoy with friends.
